Ingredients
For the Pasta:
- 300g pasta (penne, rigatoni, or your choice)
- 1 teaspoon salt (for boiling water)
For the Sausage:
- 200g spicy sausage (Italian, chorizo, or andouille), sliced
For the Sauce:
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 medium onion, finely chopped
- 1 can (400g) crushed tomatoes (or fresh tomatoes, peeled and chopped)
- 1 teaspoon smoked paprika
- ½ teaspoon red chili flakes (adjust to taste)
- ½ teaspoon dried oregano
- ½ teaspoon dried basil
- Salt and pepper, to taste
- ¼ cup heavy cream (optional for creamy sauce)
Additional Ingredients:
- 2 tablespoons grated Parmesan cheese (plus more for garnish)
- 1 handful fresh basil or parsley, chopped (for garnish)
Optional Add-Ins:
- 1 cup baby spinach or kale (for extra greens)
- ½ cup diced bell peppers or cherry tomatoes
Instructions
Step 1: Prepare the Ingredients
- Bring a large pot of salted water to a boil. Add the pasta and cook until al dente according to the package instructions. Reserve ½ cup of pasta water and then drain the pasta.
- Slice the sausage into bite-sized pieces, mince the garlic, and finely chop the onion.
Step 2: Cook the Sausage
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Add the sausage slices and cook until browned and slightly crispy, about 5-7 minutes. Remove the sausage and set aside.
Step 3: Sauté Aromatics
- In the same skillet, add another tablespoon of olive oil. Toss in the minced garlic and chopped onion. Sauté for 2-3 minutes until softened and fragrant.
- Sprinkle in the red chili flakes, smoked paprika, oregano, and basil. Stir for 1 minute to release their flavors.
Step 4: Build the Sauce
- Pour in the crushed tomatoes and stir to combine. Season with salt and pepper to taste.
- Let the sauce simmer for 8-10 minutes, stirring occasionally, until it thickens slightly.
- For a creamy version, stir in the heavy cream and simmer for another 2 minutes.
Step 5: Combine Pasta and Sauce
- Add the cooked pasta to the skillet, tossing well to coat every piece in the sauce. If the sauce is too thick, add a splash of the reserved pasta water to loosen it.
- Return the cooked sausage to the pan and mix everything thoroughly. Cook for 2-3 minutes to allow the flavors to meld.
Step 6: Garnish and Serve
- Transfer the spicy sausage pasta to serving plates or a large bowl.
- Garnish with grated Parmesan cheese and fresh basil or parsley.
- Serve hot with a side of garlic bread or a fresh salad, and enjoy!
