  • Cuisine: American, Seafood

Ingredients

  • Shrimp – 1 lb large shrimp, peeled and deveined (tail-on for presentation, optional).
  • Butter – 4 tablespoons unsalted butter for the rich, creamy base.
  • Olive Oil – 2 tablespoons to complement the butter and prevent burning.
  • Garlic – 4-5 cloves, finely minced for bold, aromatic flavor.
  • White Wine or Chicken Broth – ½ cup to deglaze the pan and add depth to the sauce.
  • Fresh Lemon Juice – 2 tablespoons for a bright, tangy kick.
  • Red Pepper Flakes – ¼ teaspoon for a subtle heat (optional).
  • Salt and Pepper – To taste, for seasoning.
  • Fresh Parsley – 2 tablespoons, chopped, for garnish and freshness.
  • Grated Parmesan Cheese – Optional, to add extra richness and texture.

Instructions

Step 1: Prepare the Shrimp

  1. If using frozen shrimp, defrost them under cold running water. Pat them dry with paper towels.
  2. Season the shrimp lightly with salt and pepper. Set aside.

Step 2: Heat the Pan

  1. In a large skillet, heat 2 tablespoons of olive oil and 2 tablespoons of butter over medium heat until the butter melts and starts to foam.
  2. Add the shrimp in a single layer. Sauté for 2-3 minutes on each side, or until the shrimp turn pink and opaque. Remove the shrimp from the skillet and set them aside.

Step 3: Make the Sauce

  1. In the same skillet, add the remaining butter and minced garlic. Cook for about 1 minute, stirring constantly, until fragrant.
  2. Pour in the white wine (or chicken broth) and use a wooden spoon to scrape up any browned bits from the bottom of the pan. Let the mixture simmer for 2-3 minutes to reduce slightly.

Step 4: Add Lemon and Seasonings

  1. Stir in the fresh lemon juice and red pepper flakes. Taste the sauce and adjust the seasoning with salt and pepper as needed.

Step 5: Combine the Shrimp

  1. Return the cooked shrimp to the skillet. Toss them gently to coat in the garlic butter sauce. Let everything heat through for about 1 minute.

Step 6: Garnish and Serve

  1. Sprinkle fresh parsley over the shrimp and sauce for a pop of color.
  2. If desired, garnish with grated parmesan cheese for extra richness.

Serving Suggestions

  • With Pasta: Serve the shrimp scampi over a bed of linguine or spaghetti, tossing the pasta in the sauce for maximum flavor.
  • With Bread: Pair with crusty garlic bread to soak up the delicious sauce.
  • Low-Carb Option: Serve over zoodles or steamed vegetables for a lighter, healthier meal.
