Ingredients

  • 1 1/2 cups long-grain white rice (uncooked)
  • 1/4 cup vegetable oil (or canola oil)
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 cup tomato sauce (or blended tomatoes)
  • 2 1/2 cups chicken or vegetable broth (warm)
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt (or to taste)
  • 1/4 cup peas and carrots (optional, for added color and texture)
  • Fresh cilantro (optional, for garnish)
  • Lime wedges (optional, for serving)

Instructions

Step 1: Rinse the Rice

  • Place the rice in a fine-mesh strainer and rinse it under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming sticky.

Step 2: Toast the Rice

  • Heat the vegetable oil in a large skillet or pan over medium heat.
  • Add the rinsed rice and stir frequently, toasting until the grains turn a light golden brown (about 5–7 minutes). Toasting gives the rice a nutty flavor and helps it stay fluffy.

Step 3: Add Aromatics

  • Stir in the chopped onion and garlic. Sauté for 2–3 minutes until fragrant and the onion becomes translucent.

Step 4: Incorporate Tomato Sauce and Spices

  • Pour in the tomato sauce and stir to coat the rice evenly.
  • Sprinkle in the ground cumin and salt, mixing well.

Step 5: Add Broth and Simmer

  • Slowly pour the warm chicken or vegetable broth into the skillet, stirring to combine.
  • Bring the mixture to a gentle boil, then reduce the heat to low. Cover the pan with a tight-fitting lid.

Step 6: Cook Until Tender

  • Allow the rice to simmer for about 20–25 minutes, or until the liquid is fully absorbed.
  • Avoid removing the lid or stirring during this time, as it can affect the texture.

Step 7: Fluff and Serve

  • Once the rice is cooked, turn off the heat and let it sit, covered, for 5 minutes.
  • Remove the lid and fluff the rice gently with a fork.

Optional Step: Add Garnishes

  • Stir in peas and carrots for extra color and flavor.
  • Garnish with fresh cilantro and serve with lime wedges for a zesty finish.
