  • Cook Time: 35 minutes
  • Total Time: 2 hours 50 minutes

Ingredients

For the Crust:

  • 1 ½ cups of crushed graham crackers (or Oreos for a chocolate crust)
  • 6 tablespoons of unsalted butter, melted
  • 2 tablespoons of granulated sugar (optional for extra sweetness)

For the Cheesecake Filling:

  • 16 oz (2 packages) of cream cheese, softened
  • ½ cup of granulated sugar
  • 2 large eggs
  • 1 teaspoon of vanilla extract
  • ¼ cup of sour cream (for added creaminess)

Optional Toppings:

  • Fresh fruit (like berries or sliced peaches)
  • Chocolate chips or shavings
  • Caramel or fruit sauce drizzle
  • Crushed nuts (e.g., pecans or almonds)

Instructions

Step 1: Prepare the Crust

  1. Preheat your oven to 325°F (160°C) and line a 9×9-inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a mixing bowl, combine crushed graham crackers, melted butter, and sugar (if using). Mix until the texture resembles wet sand.
  3. Press the mixture firmly and evenly into the bottom of the prepared pan.
  4. Bake the crust for 8–10 minutes until lightly golden. Remove from the oven and let it cool while preparing the filling.

Step 2: Make the Cheesecake Filling

  1. In a large bowl, beat the softened cream cheese and sugar together until smooth and creamy.
  2. Add the eggs, one at a time, mixing on low speed until fully incorporated. Avoid overmixing to prevent cracks.
  3. Mix in the vanilla extract and sour cream, blending until the filling is smooth and lump-free.

Step 3: Assemble and Bake

  1. Pour the cheesecake filling over the cooled crust and spread it evenly with a spatula.
  2. Bake in the preheated oven for 30–35 minutes, or until the center is set but still slightly jiggly.
  3. Remove the bars from the oven and let them cool to room temperature. Then refrigerate for at least 4 hours or overnight for the best results.

Step 4: Add Toppings and Serve

  1. Once chilled, carefully lift the cheesecake bars from the pan using the parchment paper overhang.
  2. Add your desired toppings, such as fresh fruit, chocolate drizzle, or caramel sauce.
  3. Slice into squares or rectangles using a sharp knife dipped in warm water for clean edges.
  4. Serve and enjoy your delicious cheesecake bars!
