  • 1 1/2 cups heavy cream
  • 1/2 cup grated Parmesan cheese (plus extra for garnish)
  • 1 tsp smoked paprika (optional for extra flavor)
  • Salt and pepper to taste

  • Fresh parsley, chopped
  • Red pepper flakes (for extra spice)

Instructions

1. Cook the Pasta

  • Bring a large pot of salted water to a boil.
  • Add the pasta and cook according to package instructions until al dente.
  • Reserve ½ cup of pasta water, then drain the pasta and set it aside.

2. Season and Cook the Shrimp

  • Pat the shrimp dry with a paper towel.
  • Toss the shrimp in 1 tablespoon of Cajun seasoning until well-coated.
  • Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  • Add the shrimp in a single layer and cook for 2-3 minutes per side, or until pink and opaque.
  • Remove the shrimp from the skillet and set aside.

3. Prepare the Sauce

  • In the same skillet, melt 2 tablespoons of butter over medium heat.
  • Add the minced garlic and sauté for 30 seconds until fragrant.
  • Stir in the diced tomatoes and cook for 2 minutes.
  • Pour in the heavy cream and sprinkle in the remaining Cajun seasoning.
  • Add Parmesan cheese and smoked paprika (if using), then stir to combine.
  • Let the sauce simmer for 3-5 minutes, stirring occasionally, until it thickens slightly.

4. Combine Everything

  • Add the cooked pasta to the skillet with the sauce, tossing to coat the pasta evenly.
  • Return the cooked shrimp to the skillet and mix gently to combine.
  • If the sauce is too thick, add a splash of the reserved pasta water until desired consistency is reached.

5. Serve and Garnish

  • Transfer the Cajun shrimp pasta to serving plates.
  • Garnish with fresh parsley, grated Parmesan, and red pepper flakes if desired.
